In the foothills of the Northern Andes in Gaitania, Colombia sits one of our favourite farms and producers, El Oasis, planted and managed by Nectario Zúñiga alongside his wife and sons from 1982 until his recent passing. This is our fifth and final season harvest of our house Amarillo Bourbon, again processed with our partners at origin as a Lactic Natural. Classified as an anaerobic fermentation, the elimination of oxygen favours a greater concentration of Lactobacillic acid, leading to the extraordinarily unique tropical fruit flavours this lot has become known for.
