In the foothills of the Northern Andes in Gaitania, Colombia sits one of our favorite farm and producer, Nectario Zuñiga at El Oasis. This is our fourth season harvest of our house Amarillo Bourbon, we have worked with our partners at origin to process this new lot using a Lactic Natural process. Classified as an anaerobic fermentation, the elimination of oxygen favours a greater concentration of Lactobacillic acid, leading to extraordinarily unique tropical fruit flavours.
